It is a semi-seasoned cheese produced during the harvest period, which has a strong link with the territory,
as it is aged in the marc of Nerello Mascalese and Nerello Cappuccio, native grapes of Etna.
Description: the surface is bright purple in color, the cut paste is compact the color may vary from
ivory white to straw yellow. Intense odor in which lactic sensations are perceived accompanied by light
wine sensors (fruity). The compact paste melts in the mouth and sweet with a slight hint of wine that fades
from the crust to the heart of the cheese.
Ingredients: pasteurized sheep’s milk, pasteurized milk, salt, rennet, lactic ferments.
